OCNJ :)
So, unfortunately my sleep schedule will remain the same once school starts. However, there are three reasons I am very much looking forward to going back to classes. First, I am only taking 14 credits which is my lightest course load yet (it used to be 18-20). Second, I get to do my first clinical rotation which is super exciting for me as a Nursing major. But, third -- overall I am most looking forward to having no class on Fridays & going to the shore! I have a shore house in ocean city and despite having a spring/summer class cycle, I am very much looking forward to being able to do my homework down there on the beach every weekend I possibly can! :)
Good Call Jordan
I couldn't agree with you more Jordan. Sleeping in is going to be AMAZING. While on co-op I feel like there just aren't enough hours in the day. Even though its winter the one thing that always bums me out is how I never see the daylight. I only get to be outside in the sun for about 20 minutes a day between walking to work and walking back home. By the time I'm back at my apartment its almost always pitch black out. Being a person who loves being outside, that will be the great part about having a regular school schedule. Not to make you jealous Jordan but I don't have class until 12 everyday and no classes Tuesday, that's sleeping in at its finest.
Sleeping in
The thing I'm most looking forward to is being able to sleep in. My earliest class is 9:30. This means, I can sleep till 9 oclock as opposed to 7:30. I don't have class on Monday's either! I don't have to do stuff (besides homework) on Mondays. Technically, my Tuesday's count as my Mondays but only having to go to class 4 days a week will be magical.
Also, I love those breaks in the middle of the day between classes were I can just sit down and relax. I miss those.

Potatoes
So, when I first saw the question, the first thing that came to my mind was spaghetti because you can do so many different things with it. But, since Jordan already said that, I would have to say potatoes. I love potatoes in all forms. Mashed, baked, chips, fries..I love it all and would have zero problem eating only potatoes forever. :)

I live for food. I really don't think anyone understands. Take me seriously. I love food more than you could ever imagine. To me this question is almost cruel because it's stripping food of its most amazing quality -- the fact that it's so diverse!
If it really came down to it, I could live off of cupcakes. I kid you not. They aren't necessarily the best thing I've ever tasted, but somehow they make me happier than any other food does. I love the way cupcakes look, the way they smell while they're baking, the fact that as small as they are they still pack so much flavor, the way the icing compliments the cake perfectly... I could go on and on, but they're simply amazing. I could eat a cupcake for breakfast without icing (a muffin), carrot cake or pumpkin cake for lunch, probably vanilla for dinner as to not interfere with my obvious dessert choices--red velvet with cream cheese frosting or a smores cupcake filled with chocolate ganache, topped with marshmallow icing and grambcracker crumbs.
Now I've never tried one, but apparently people also eat savory cucpakes. Maple-bacon cupcakes are popular, so those could rotate with the afformentioned muffins as a breakfast item. I've seen sushi cupcakes on Food Network, and if I was ever feeling bold enough, I might consider trying one for a lighter lunch. Anything past that is a little too weird for me (I'm sure someone's tried--and failed--to make a cheeseburger cupcake before).
The point is, I'd make it work and I would love every minute of it. Unfortunately, I'm sure my life span would drastically decrease after a few weeks of such healthy diet choices, but you have to roll with the punches.

American Fries
If I had to eat one item of food for the rest of my life, it would be french fries. As unhealthy as it may sound, I eat fries almost every day. They can be prepared in so many ways. You can have plain fries, cheese fries, ketch-up fries, and when I'm feeling extra fancy Cali-fries. No matter how hard I try, I never get tired of fries! Fries are my weakness in life.
